I think the children will stay Cambridge while they’re at Lambeth. Perhaps they will go onto high school as Wales. It would be weird to change their surname now, and then again to Wales.

Technically they wouldn't be changing their surname - which is Mountbatten-Windsor. They would be changing the name they use to reflect the changing status of their father.

Prince William, the Duke of Cornwall and Cambridge, has left Balmoral and is travelling back to Windsor to be with his family ahead of the Accession Council, Kensington Palace said.
As a Privy Counsellor he will also will attend the Accession Council, the palace confirmed.

Perhaps a dumb question, but now William and Kate have the Dukedom of Rothesay in Scotland (and presumably a new one in Northern Ireland?) what does this mean for their former ones? Are they merged like the Cornwall and Cambridge are are those titles passed down to George or returned to the Crown?

They do. They have all the traditional titles of the heir to the throne bar the title of Prince(ss) of Wales. The titles are going to be George’s when William becomes King as they the automatic titles for the eldest son of the King. If, God forbid, William predeceases his father, George will not inherit the titles, as he would not be the eldest son of the Monarch.

William’s wedding day titles are inherited through his male line until such time where the title holder becomes sovereign at which point they merge with the crown. The heir titles Cornwall, Rothesay, etc are held by the monarch’s eldest son and heir. So like William, George will automatically get those when William becomes king. Things get complicated should the younger folks predecease the older ones but we won’t go there now.
