They are sprinkling incense in that big burner. Wearing gloves to protect the skin from the smell and possibly stains would be the most logical explanantion.
I don't think incense as such is sacred and shouldn't be desecrated by human touch. (But I'm not an expert!!)

Afterwards Don Felipe and Doña Letizia blah, blah, blah...There, after crossing the Memorial Gate and donning white gloves, the King and Queen carried a wreath, stopping to greet the Flag of Korea, until the Hyeonchungtab. Then, F&L dropped incense three times into the censer, observed a minute of silence and signed the cemetery's honor book.

At first I thought the gloves were to avoid touching the wreath, but they keep them on until they sign the book through the incense ceremony and Casa Real even makes the point to remark that the cross the gate and don white gloves, like it's important for the moment/ceremony.

The evening dress is OK, a little Korean style, overall she looked beautiful on it.  Her hair also looked less dark due to lighting.
Leti, please change your hair color, the dark hair looks so bad on you when you let it loose.
